vegan oyster mushroom chowder with cashew cream

Ingredients; 1 onion, 5 or more cloves of garlic pressed, 2 bay leaves, 1 tbsp or so thyme 2 cups loosely packed chopped oyster mushrooms, 3 golden or red potatoes, 2 cups whole cashews and enough hot water to cover, 1 cup coconut milk like coconut dream or silk brand ( or 2 tbsp coconut cream mixed with water), 2 veggie broth cubes, olive oil for sautéing, soak cashews in hot water. Saute onions, then add mushrooms, then potatoes and herbs simmer till potatoes are tender. Add the veggie broth cubes coconut milk and enough water to cover. blend cashews till creamy and add to soup, simmer till thick and creamy.
